A quick and easy GAPS treat:

In a food processor or Vitamix, blend equal parts:

  • soaked and dried nuts (We've used walnuts, pecans, hazelnuts, and brazil nuts.)
  • unsweetened coconut shreds
  • dates

Press down into a baking pan and refrigerate, or roll into balls (and roll in coconut!).

I find that 1 cup of each (3 cups total) will fill an 8x8 pan. It's really easy to double, so go ahead and make an extra batch to stick in the freezer!
